The mission of the Clark County Food Bank is to "alleviate hunger and its root causes." One of the root causes of hunger is a lack of access, knowledge, skills and confidence needed to prepare and shop for tasty, nutritious, affordable meals. The goal of the nutrition education program is to offer cooking and nutrition education opportunities to low-income individuals, families and youth in an effort to eliminate long-term food assistance. The AmeriCorps member will serve in tandem with the Nutrition Education Manager to build upon the 2011-2018 Nutrition Education Programs and will both lead and support nutrition classes, events and workshops focused on healthy choices, shopping on a budget, basic cooking skills, food safety and gardening. Classes will include a diversity of age groups, ranging from older adults to young children, as well as diversity in ethnic backgrounds and mental/physical abilities. Classes will be conducted on-site in a learning kitchen as well as venues throughout Clark County. Members will recruit, train, and support new and current volunteers to provide program sustainability and necessary growth. Members will recruit new and foster current community partnerships to continue expansion of program by facilitating meetings, taking part in strategic planning and conducting outreach. Members will serve independently as individuals, but also as part of a team of five under the supervision of the Nutrition Education Manager. The position directly aims to support CCFB's mission by providing opportunities for clients to learn how to cook, shop, grow and prepare healthy, delicious meals on an affordable budget. By gaining these skills and knowledge, clients will be able to stretch food dollars and thus reduce reliance upon food assistance. Clients will also become healthier as a result of consuming healthier food options.
