We are seeking someone with strong culinary skills who is passionate about health, cooking and plant-based cuisine to be a leader on our culinary team. You will work closely with the Culinary Leadership team to execute menu items at high volume on a changing menu. You should be energetic, creative, self-motivated and detail-oriented, and capable of both working independently as well as a part of a culinary team. What You'll Do

  • Work directly with Managers and Operations teams to ensure balance between production, inventory, and fulfillment
  • Analyzes production for shortages and expired components to reduce waste
  • Manages daily requirements so that production and purchasing have the appropriate information
  • Manage our production team; own everything from setting priority lists, accurate counts and weights of product. Building manifests for deliveries
  • Set up production equipment according to recipe guidelines
  • Prepare menu items as directed in a sanitary and timely manner and lead a team of hungry culinary individuals in making awesome food
  • Follow recipes, portion control, and QA standards
  • Clean and maintain production equipment while practicing exceptional safety, sanitation and organization skills
  • Assist with overall kitchen organization, including walk-in coolers and all dry storage areas
  • Ensure that production remains HACCP compliant
  • Adhere to Thistle's standards of excellence and code of conduct

What You'll Bring

  • 3-5 years related experience and/or training in production; or equivalent combination of education and experience
  • Ability to communicate effectively with internal partners
  • Must welcome change and have a continuous improvement state of mind
  • Excellent organization and communication skills (verbal and written)
  • You are passionate about healthy food and nutrition
  • You have a proven ability to execute food production to meet time, quality and volume standards
  • You have strong desire to improve others abilities and elevate the whole team
  • You are self-motivated, take initiative, and willing to get your hands dirty
  • You are a natural problem solver    
  • Oversee and perform scheduling, inventory and budgeting
  • You have a positive attitude and strong leadership & time management capabilities
  • You are familiar with the inner-workings of a kitchen; prep lists, organization, stations
  • You a computer savvy with a workable knowledge of Google Docs
  • Possession of a valid California or equivalent Food Handlers Certification
