Prep Cook - Clevelander

The Clevelander Hotel Miami Beach, FL


Coordinates daily food portioning and preparation in accordance with Clevelander standards of recipes, quality, and presentation.

Duties:Duties and Responsibilities:

Completes assigned side-work duties (opening, closing, ongoing)

Operates and maintains all standard kitchen cooking equipment including, grill, fryer, flattop, and broiler

Maintains cleanliness in assigned station and/or stations

Assists Line Cooks in the performance of duties

Coordinates daily food portioning and preparation and restocks stations

Ensures product presentation, quality, and cook time are in accordance with Clevelander standards

Practices sanitary and safe food handling by properly following health department regulations

Notifies Kitchen Manager when food item inventories are low

Reports and documents any observed or known safety hazards, conditions or unsafe practices and procedures to management immediately

Reports spills, waste and spoilage of food items to Kitchen Manager

Maintains proper levels of food production according to estimates on production sheets

Rotates all foods to ensure older food is used before newly purchased food and correctly completes productions charts

Observes clean as you go cooking procedures

Organizes food preparation areas, freezers, coolers and shelves

Maintains and ensures compliance of all policies and procedures

Other Functions:

Qualifications:Minimum Qualifications:

18 years old, High school diploma or 2 years related experience preferred

Knowledge, skills and abilities:

Ability to work in a team environment

Ability to verbally communicate and take direction

Ability to follow standard recipes

Strong attention to detail

Basic reading and math skills

High energy level and self motivated

Strong organizational and time management skills required

Working Conditions:

Work is performed in a mostly kitchen environment and requires evening and weekend hours
