  • Support the Director of In Room Dining in the development and implementation of the strategic plan and vision for the division consistent with the company's objectives.
  • Organize, coordinate and direct staff in set-up, delivery and retrieval of amenities in accordance with departmental standards.
  • Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards.
  • Inspect table set-ups; check for cleanliness, neatness and agreement with guest's order and departmental standards.
  • Anticipate guests' needs, respond promptly and acknowledge all guests, no matter how busy or the time of day.
  • Maintain complete knowledge of and comply with all departmental policies, procedures and standards.
  • Resolve guest complaints, ensuring guest satisfaction.
  • Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
  • Maintain complete knowledge of: all liquor brands, beers and non-alcoholic selections available to Room Service, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, all menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices, guest room layout, locations and room numbers/names, manual system procedures and daily room arrivals/departures.
  • Check storage areas for proper supplies, organization and cleanliness.
  • Establish par levels for supplies and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
  • Requisition linens/skirting required for business and assign staff to transport such to Room Service
  • Manage Point of Sale (POS) pricing/maintenance issues to ensure checks can be processed correctly.
  • Follow current proper policies and procedures for Manager comps and voids.
  • Utilize Spotfire to maximize sales and profits, manage labor and control costs.
  • Conduct weekly FF&E checklists to maintain furniture, fixtures and equipment. Ensure dining rooms are in accordance with the Five Star/Five Diamond Maintenance Program, to include carpet, walls, light bulbs, windows and overall general cleanliness.
  • Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts, adjusting schedules throughout the week to meet the business demands.
  • Ensure that staff report to work as scheduled, documenting any late or absent employees.
  • Assign work and side duties to staff in accordance with departmental procedures.
  • Conduct pre-shift meetings with staff and review all information pertinent to the day's business.
  • Inspect grooming and attire of staff; rectify any deficiencies.
  • Inspect, plan and ensure that all materials and equipment are in complete readiness for service.
  • Check the status of all orders and ensure that they are delivered within designated timelines.
  • Assist Room Service staff with their job functions to ensure optimum service to guests.
  • Monitor and ensure that all tables/trays are removed from guest rooms/corridors and returned to Room Service according to department procedures.
  • Assist in taking guests' orders, following specified procedures, as necessary to ensure department standards.
  • Organize, coordinate, direct staff in set-up, service and breakdown of hospitalities in accordance with departmental standards.
  • Check bar set-ups, buffet/reception tables and coffee breaks for cleanliness, attractiveness and layout, ensure agreement with function order and department standards, ensure replenishment of items as specified and requested by group contact.
  • Ensure all closing duties for staff are completed before staff sign out.
  • Provide feedback to staff on their performance, handling disciplinary problems and coach employees according to MGM Resorts International standards.
  • Foster and promote a cooperative working climate, maximizing productivity and employee morale.
  • Perform other job related duties as necessary.

  • At least 5 years of high-volume F&B service experience.
  • At least 3 years of high volume hotel/resort Room Service experience.
  • At least 3 years of supervisory/management experience.
  • Working knowledge of beverage and wine service.
  • Working knowledge of kitchen operations.
  • Working knowledge of health, safety and sanitation regulations.
  • Superior knowledge of all food and beverage products, menu items and equipment used to perform these duties.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skills to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • Strong working knowledge of Microsoft Excel, Outlook and Word.
  • High school diploma or equivalent.
  • Able to effectively communicate in English, in both written and oral forms.


  • Bachelor's degree in a related field.
  • Experience managing employees under a collective bargaining agreement.
