General Summary of Job Duties
As a Sushi Roller will be responsible for the preparation of all sushi at the Shinsen Sushi bar and for Ti Amo restaurant.
Essential Job Function and Duties
- Assist with the preparation of sushi ingredients.
- Be prepared to run sushi station efficiently and smoothly, including set-up, breakdown and routine cleaning of sushi bar.
- Greet guests in a professional, friendly and courteous manner. Informs guests of specials and menu changes; makes suggestions and answers questions regarding sushi menu.
- Deal with guests in a professional, friendly and courteous manner.
- Prepare all sushi items according to proper recipe and portion size.
- Keep track of all sushi items being served to assure they are entered correctly in the POS.
- Observe each guest to ensure that they are satisfied with the food service.
- Throughout shift, maintains a clean and organized workstation keeping sanitation and safety as the highest priority.
- Thorough knowledge of applicable Company and departmental policies and procedures.
- Maintain an open line of communication with Management.
- Maintain a positive and professional demeanor during all interactions with guests, fellow team members, and vendors.
- Ability to accept performance feedback in a professional manner.
- On time and regular attendance of all scheduled shifts is considered an essential function of the job.
- Other duties as assigned.

Skills, Education and Other Requirements
- 1 - 2 years of demonstrated ability with and knowledge of Sushi.
- Ability to interact with guests and fellow team members.
- Previous and demonstrable skills using knives.
- Excellent communication skills.
- Ability to multi- task and show flexibility during high volume periods.
- Minimum of 1 – 2 years training at a culinary institute or previous restaurant training and experience required.
- Enough strength and dexterity to handle heavy pots and pans and to operate kitchen equipment.
- Cooperative attitude in performing a variety of tasks as assigned.
- Must have 1 to 3 years working in a kitchen, preparing cold food and salads for counter displays.
- Ability to maintain clean personal hygiene.
- Ability to follow instructions.
- Ability to successfully work in fast paced environment.
- Ability to work in a team and independently.
- Must be able to speak, write and understand the English language.
- Must have the ability to work a flexible schedule and weekends.
- Must have job related tools.
- Ability to read, write, speak and understand the English language.
- Bi-lingual (English/Spanish) is a plus.
- Must present a well-groomed appearance.
- Must be at least 21 years of age.
- The ability to maintain composure in a potentially stressful environment.
- The ability to successfully interact with all levels of team members and management.
- Flexibility to work varied shifts, including weekends and holidays, with variable overtime.
- High School Diploma and/or GED preferred.
- Must be able to tolerate areas containing secondary smoke, high noise levels, bright lights and dust.
- Excellent verbal and written communication skills.
