POSITION REPORTS TO: Sous Chef

JOB SUMMARY: Under supervision, prepares cooks and serves food; takes orders and assists in the operation of a food service outlet; maintains food inventory and storage, maintains sanitary working conditions.

Responsibilities

Practice, support and promote the Mission, Vision and Values of Muckleshoot CasinoProduce product on a daily basis maintaining quality standards and strong work ethic.Season and cook food according to recipes or personal judgment and experience.Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.Regulate temperature of ovens, broilers, grills, and roasters.Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.Ensure proper presentation to provide maximum appeal and freshness.Maintain production knowledge and attention to detail with taste and quality.Produce product in a cost effective and hygienic manner.Perform cashier duties, such as taking orders, serving orders and accurately handling order transactions.Perform busser duties, such as cleaning tables, ensuring condiment and garbage stations are clean and tidy at all times and run food to waiting Guests.Constantly strive to improve operating procedures.Properly label and date all products to ensure rotation, safekeeping and sanitation.Ensure food quality is superior and takes action to correct any irregularities.Ensure kitchen equipment is properly maintained and functioning.Work within the sanitation standards and in compliance of MIC, local, state, and federal regulations and guidelines.Work with others to ensure the cleanliness and organization of the kitchen.Create, maintain and facilitate a positive work environment.Smile and engage Guests and Team Members with a positive professional demeanor.Perform other tasks/duties as assigned.Qualifications

LICENSES OR CERTIFICATIONS (required/preferred):

* Maintain a valid WA State Health Card/Food Handlers permit required.

* Maintain a Class 12 Alcohol Service Permit required.

EDUCATION, EXPERIENCE, AND TRAINING FOR POSITION (required/preferred):

* High School diploma or GED equivalent preferred.

* Two (2) year certificate from an accredited culinary program or minimum 2 years' experience in a similar food service facility required.

SPECIFIC SKILLS/KNOWLEDGE/ ABILITIES REQUIRED FOR POSITION:

* Demonstrate ability to read and understand recipes, food abbreviations, weights and preparation techniques.

* Demonstrate general knowledge of kitchen equipment.

* Proven skills at handling kitchen utensils including but not limited to knives.

* Demonstrate basic math skills; demonstrate ability to understand, calculate and follow recipe measurements and proportions.

* Demonstrate ability to multi-task in a fast-paced and high-pressure environment.

* Demonstrate understanding of all applicable food sanitation regulations.

* Demonstrate ability to read and understand information and ideas presented in writing.

* Demonstrate capability to follow procedures and take direction.

* Demonstrate ability to maintain professional appearance and demeanor at all times.

PHYSICAL REQUIREMENTS: The physical requirements described herein are representative of those that must be met by a team member to successfully perform the essential duties of this job.

* Stamina to stand and work on feet without leaning or breaks for extended periods of time.

* Frequently required to lift and/or move up to fifty pounds (50lbs), occasionally higher with or without assistance.

* Manual and finger dexterity to use all kitchen equipment.

* Frequently required to perform repetitious work.

* While performing the duties of this job, reach with hand, arms and body; bend; squat; kneel; crouch; climb stairs; balance; climb ladders; stoop; talk and hear; taste and smell.

* Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

WORK ENVIRONMENT:

* The noise level in the work environment is usually moderate.

* Frequently required to perform all duties in extreme temperature ranges.

* Some essential functions of the job performed within a smoking environment.

* Monitored by surveillance cameras.
