Viejas Casino and Resort is seeking positive and energetic people to join our Food and Beverage team to support the expansion of our Hotel as the newest Resort that can accommodate premier convention and meeting space. Our Four Diamond property will have 20,000 square feet of state of the art conference space and a 2500 seat outdoor venue.

This position is responsible for the banquet server function for the property including:

* Set-up, service and clearing of food and beverage items to banquet guests in a manner consistent with the Viejas service standards

* Projects an approachable, engaging, friendly and accommodating demeanor to both external and internal guests.

* Creates an engaging atmosphere by introducing himself/herself and attentively offering a friendly verbal greeting, making a personal connection, using the guest's name, a promoting winning/positive environment, encouraging luck and offering a positive parting remark.

* Maintains knowledge and promotes current promotions and event advertising one or more features of the property.

* Follows all department and casino standards and expectations to deliver exceptional guest service.

* Uses professional language that is devoid of slang and refrains from addressing guest in an overly familiar manner.

* Anticipates guest's needs and asks questions, delivers service within department guidelines, checks for guest satisfaction and offers additional assistance and expresses friendly appreciation for their business with our company.

* Resolves problems beyond expectations without consulting a supervisor or escalates as needed.

Event Preparation/ Set-Up

* Sets banquet tables to meet function specifications.

* Prepares tables, action stations, buffets, service carts, dessert table/carts and cordial carts as specified in the Banquet Event Order.

* Assists in set-up of linen, china, glass, silver and accent pieces for each function according to the Banquet Event Order.

* Knows all banquet menu and beverages specified by group and is able to describe the ingredients and preparation methods.

Food Coordination and Service

* Communicates additional meal requirements, allergies, dietary needs and special requests to the kitchen.

* Communicates guest orders including any special needs or requests to the Banquet Manager or kitchen.

* Checks completed kitchen orders with the guest's original order; transports items to the guest table in a timely manner to ensure proper temperature is maintained.

Event Service

* Offers pre-determined menu selections to each table; maintains knowledge of each selection's origin, taste and preparation method.

* Delivers and serves food and beverages, including, but not limited to, meals, condiments and accompaniments for assigned banquet events.

* Ensures each course is cleared in a timely manner and that tables are properly crumbed.

* Removes china, glassware, silverware and trash from tables at the conclusion of the meal period and delivers them to the stewarding area.

* Assists others with side work including, but not limited to cleaning, stocking and rolling of silverware.

* Assists fellow team members and other departments wherever necessary to maintain positive working relationships.

* Replenishes buffet items to ensure consistency and freshness in presentation.

* Monitors and maintains cleanliness, sanitation, and organization of assigned station and service areas.

* Monitors tableware to ensure it is presentable to guests.

SUPERVISION

EDUCATION/CERTIFICATION

* High school diploma or general education degree (GED).

* Food Handler's Card required.

* Certification of alcohol awareness program

* Training in food, wine and liquor service preferred.

* Must be 21 years or older.

EXPERIENCE

* One year of related experience as a food and beverage staff working in a high volume restaurant, casino or banquet facility.

* Previous point of sale system experience an asset.

KNOWLEDGE AND SKILLS

* Good verbal, written and interpersonal communication skills.

* Knowledge of banquet functions, including room set-up, table set-up and closing out functions.
